Eryngium Bourgatii, Mediterranean eryngo or Mediterranean sea holly, is a clump-forming herbaceous perennial in the Apiaceae family. Kew accepts the species as native from the Pyrenees to Morocco. Mature plants are about 30-45 cm tall and 30-50 cm wide, with a deep-rooted, upright structure adapted to dry, rocky ground.
Deeply lobed basal leaves are green with conspicuous silver veins and spiny margins. In July, August, and September, branched vivid blue stems carry compact metallic blue umbels surrounded by narrow, spiny silvery blue to violet bracts. The sculptural flower heads attract pollinators and remain useful for fresh or dried arrangements, while retained seed heads can add winter interest.
Grow in USDA zones 5-8 in full sun and poor to moderately fertile, well-drained Chalk, Loam, or Sand at any pH. Protect the crown and taproot from winter wet, avoid rich or persistently moist soil, and water sparingly after establishment. The species tolerates drought and coastal conditions. Propagate by root cuttings in late winter, and monitor for slugs, snails, eelworms, root rot, and powdery mildew.
