Dahlia 'Café au Lait' is a vigorous, upright, clump-forming tuberous perennial famed for enormous decorative dinnerplate blooms. Strong green stems rise through dark green, toothed, divided foliage and carry fully double flowers whose broad petals shift among creamy ivory, blush pink, soft peach, beige, and pale mocha.
Plants commonly reach 90-120 cm high and 50-80 cm wide, with flowerheads about 20-25 cm across from midsummer until frost. Grow in full sun in fertile, humus-rich, moist but well-drained clay, loam, or sand. Pinch young growth, stake early, water regularly, feed through active growth, deadhead, and disbud for the largest blooms.
The refined neutral palette is prized for wedding work and cutting. In USDA zones 8-10, tubers may overwinter in reliably drained soil; in colder regions lift after frost, dry briefly, and store cool, dark, dry, and frost-free.
